Fluke sushi, also known as Hirame in Japanese, is very popular in sushi restaurants, especially in the Northeast where it’s also a targeted game fish. Fluke has beautiful white meat. The top side fillet has a translucent look, in contrast to the bottom fillet.
What we like about this fish is that it is truly a day-boat caught species. We have been buying this fish from the same fishing families for over two decades. The boat goes out in the morning and returns at night with some of the freshest fish in the land. If you desire to take a stab at making some sashimi at home you can rest assured this fish is seriously fresh. If you just love clean white flakey fish like flounder or sole, well this fish would be the granddaddy of the category.
